APPLE CIDER VINEGAR STUDIES

1. DIABETES STUDY: 
Vinegar Improves Insulin Sensitivity to a High-Carbohydrate Meal in Subjects With Insulin Resistance or Type 2 Diabetes

BRIEF SYNOPSIS: These data indicate that vinegar can significantly improve postprandial insulin sensitivity in insulin-resistant subjects. Acetic acid has been shown to suppress disaccharidase activity (3) and to raise glucose-6-phosphate concentrations in skeletal muscle (4); thus, vinegar may possess physiological effects similar to acarbose or metformin. Further investigations to examine the efficacy of vinegar as an antidiabetic therapy are warranted.

Vinegar intake reduces body weight, body fat mass, and serum triglyceride levels in obese Japanese subjects.

BRIEF SYNOPSIS: Daily intake of vinegar might be useful in the prevention of metabolic syndrome by reducing obesity.

In a study of 139 children, for instance, honey was found to be much more effective than usual cough suppressants to subdue nighttime coughing in upper respiratory infections.

Two Tropical Food Drinks: Study conducted by the University of the West Indies, Trinidad & Tobago, WI

BRIEF SYNOPSIS: That study confirmed earlier findings (21) which indicated that coconut water, unlike the other edible components of coconut, have an extremely low lipid content. This latter finding would suggest that coconut water consumption is very unlikely to be a risk factor for CHD. On the basis of the findings of this study it would seem that coconut water probably is not only 'good for your daughter', but particularly when mixed with mauby, may also be excellent for your hypertensive son.

2. HEAVY METALS STUDY:
Black Sesame Seeds on Heavy Metal Cleanup

BRIEF SYNOPSIS: Black sesame pigment (BSP) was shown to bind lead, cadmium, and mercury at pH 7.0 and to a lower extent at pH 2.0. BSP at 0.05 mg/mL removed the metals at 15 μM to a significant extent (>65% for cadmium and >90% for mercury and lead), with no changes following simulated digestion.
